Recipe to share

Have you heard of Bountiful Baskets?  It is a fruit & veggie co-op that I have been participating in for a couple of years now.  It is a great way to get fresh fruits and veggies for an insanely good price - especially in the wintertime.  It is not in every state, but quite a few from east to west.  Even if you don't have Bountiful Baskets, there may be other opportunities for co-ops in your area.  Once in a while I get a large amount of a particular fruit or vegetable, so I have to go looking for recipes so I can use it up.  Thank goodness for Allrecipes.com!  I love their ingredients search. 

I thought I'd share a very simple and tasty recipe that I discovered this past weekend.  It was a family pleaser!  Even my if-it's-healthy-it-will-kill-me husband liked it.;-)

 










Green Pepper Tomato Salad

  • 3 medium tomatoes, seeded and chopped
  • 1 medium green pepper, chopped
  • 1 celery rib, thinly sliced
  • 1/2 cup chopped red onion
  • 2 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. In a large bowl, combine the tomatoes, green pepper, celery and onion. In a small bowl, combine the vinegar, sugar, salt and pepper. Stir into tomato mixture. Cover and refrigerate for at least 2 hours, stirring several times. Serve with a slotted spoon.

that recipe sounds yummy and summery (is that a word?). My hubby is not fond of green peppers, but I bet he might just try this one. Thanks for sharing. I too love allrecipes.com

The recipe sounds great. I would love it in the summer when the tomatoes are ripe. I just am not a fan of winter tomatoes but with this mixture even winter tomatoes would be pretty tasty.
