I thought I'd share a very simple and tasty recipe that I discovered this past weekend. It was a family pleaser! Even my if-it's-healthy-it-will-kill-me husband liked it.;-)
Green Pepper Tomato Salad
- 3 medium tomatoes, seeded and chopped
- 1 medium green pepper, chopped
- 1 celery rib, thinly sliced
- 1/2 cup chopped red onion
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Directions
- In a large bowl, combine the tomatoes, green pepper, celery and onion. In a small bowl, combine the vinegar, sugar, salt and pepper. Stir into tomato mixture. Cover and refrigerate for at least 2 hours, stirring several times. Serve with a slotted spoon.

that recipe sounds yummy and summery (is that a word?). My hubby is not fond of green peppers, but I bet he might just try this one. Thanks for sharing. I too love allrecipes.com
The recipe sounds great. I would love it in the summer when the tomatoes are ripe. I just am not a fan of winter tomatoes but with this mixture even winter tomatoes would be pretty tasty.
